Bill Lark started selling his Single Malt Whisky commercially in 1998. The same year Doc.Choc was born. Call it fate, call it a delicious coincidence, he's calling it destiny.

11 hand-crafted chocolates filled with a scrumptious Lark Symphony Whisky Ganache. Finished in Milk Chocolate. Rather rebelious if you ask me. But then again, so too was making Whisky in Tasmania until Bill came along.

What's all this about rebelliousness?

Little known fact, distilling was outlawed in Tasmania in 1838. It seemed someone had lamented to tell the Tasmanian's that all the grain they were growing was supposed to feed those hungry mainlanders rather than be distilled. It'd be 154 years before a Tasmanian Distillery commercially produced and sold a single-malt again.

Little known fact to 24 year old Doc.Choc - Belgians have a real thing about only pairing Dark Chocolate with Whisky. Something about it harmonising to taste like a Black Forest Cake.

"I've got a different background as a pastry chef being a savoury cook first, I find myself leaning into it more and more... I worked for Zonfrillo - he came in one day to brief a new dish and called it fatty-fat fat-fat-fat. Exploit an idea. Double down on it. Repeat it, contrast it. Build out this breadth of pallete with just one idea - it's wild. That's what I did here."
