What's in a Name?

The cocoa used to make the chocolate for this bar is sourced directly from the Franceschi Family. Pretty unique stuff.

The vast majority of the worlds cocoa is grown on small holdings, farms with somewhere up to 20 trees, mixed in with a variety of other crops. They're close together and they process their cocoa and sell it as a co-operative. As a result, it's harder to process every harvest from every farmer in a way that suits their cocoa. What they're doing has to work for the group. So the cocoa is usually bought and blended with many other harvests to make a largely consistent flavour profile that's relatively flat.

Then there's plantations - let's save those thoughts for our next rendezvous.

Then there's direct from farmer, or family, like this cocoa. The short of it is it's a setup that means cocoa can be harvested and processed in a way that allows each and every batch to shine. It's significantly more delicious. And special. And perhaps, just maybe - should become the norm rather than the abnormal.
